If they're giving you any kind of tells that they might harm or kill you then by all means put'em down and/or disarm them when the opportunity arrives (usually at the point in time where they've asked you to use your hands: "gimme yo wallet" or whatever). Believe it or not YouTube has a few good vids that'll make clear why movie shit doesn't work and why a fast redirect of their firearm and a few kicks to the groin is better than anything fancy you could dream up.
Unarmed or blade-wielding assailant, go for a pepper fogger. You get a large cone of spray with enough distance to be out of their reach. Have your other hand at the ready with your blade/firearm/sap/whatever on the off chance the spray doesn't deter them. You'll at least have given yourself an upper-hand for the ensuing combat.
