in normal use, i scrape the black bits off before cooking (not after). and only cook when the oil in the pan is smoking. then i only remove the stuff in the pan that's easily wiped away--basically there's oily carbonized stuff oxidizing on it while not in use.
it does a good job of keeping a smooth, stick free surface.
