>>137555>ventI don't hunt moose, but for whitetail deer I lay them on their side, cut down the back and pull/cut the hide away towards the stomach. This exposed the shoulders and hind quarts too. Once the hide on that side is below the knees I cut the lower legs off at knees with a knife (not through bone) then I cut the two legs on that side off at the sockets with a knife. I toss those in a game bag along with the tenderloin from the back. Then I flip the deer over and repeat on the other side. I wear a steel mesh glove on my left hand and use the knife in my right hand.
With a good, sharp, thin knife, I can do this in under 10 minutes. Well, normally. I can usually take 2-4 deer like this on a single outing and pack them all in a game back and carry on a framed backpack. I have a sled on the frame that I can use to drag the game bag if I need to.
