I've been tasked with improving the composting situation at the farm so that this time next year we have a nice big batch of compost for Spring planting. They've tried to model their system off Eliot Coleman's method, but I think they've been doing it a bit wrong. I watched a video and read about it, and I'm unsure about one aspect.
Previously, we would chuck our vegetable scraps, egg shells, spoiling food, etc from the kitchen on top of the pile as it comes. I'm thinking that in order to make the 'lasagna' compost, I need some kind of holding area for all the 'moist green material' until I can get enough to spread a layer over the pile all at once. My question is: where do I keep this stuff so it doesn't just rot into a black mess of decay before I get a chance to evenly spread it in my mulch pile?
Also, does anyone have experience introducing chickens to their compost pile so they can stritch and scratch it all around? They've had the coop nearby their old, failing pile for a long time and it doesn't seem to help at all, but I think it's a mistake to give them 24/7 access.
