they are basically 2 ways: carve in fresh wood which is easier to carve but can crack or change it's shape during drying, you can prevent it by putting it in open paper bag and letting it dry for a few months or go shortcut and boil it in water with a lot of salt and let it try then
I prefer the second way, working with seasoned wood
