I am the same. I actually try to avoid the bass since discovering big panfish...and how good they taste.
I think techniques vary hugely and depend on the lake. The lake I currently fish, my go-to for pumpkinseed sunfish is a 1/16 oz curly tail jig near the bottom in 20-25 fow around midlake sunken humps with weeds. Panfish are everywhere on this lake but that is where the giants are. Another lake I fish has mainly bluegills and the best bet is actually fly casting small poppers towards shore underneath trees.
