Hey OP, i think the food is totally ok, for two people. It is not critical what you take with you with that short of a trip.
Here is some wisdom:
Don't try to reenact the comforts from home, it means your pack will be very heavy. Don't bring a book, don't bring a radio, don't bring any special lamps or lights.
You really only need
- shelter (tent or tarp or tarp and bivy or tarp and hammock)
- sleep (a closed cell foam mat, a sleeping bag
- fire (bic and firesteel)
- knife (mora or anything sharp really will do)
- wood (hatchet or saw)
- water (2x 1l bottles if you have water on the trail)
- food (food and a pot, tinfoil
- clothes (what you wear when you move around and a fleece jacket for when you don't move, gloves and a buff/beanie, spare socks)
- toothbrush, bar of soap
- backpack.
Everything else is optional. You don't need a waterfilter if you have a pot and fire. You don't need a spare pair of trousers. You don't need toilet paper (don't use leaves, thats often not going to work, best thing is just to remove anything with a smoth pebble or moss, then wash properly, remember that you would wash your face if there was shit on it, do the same with your buttcrack). Dig a small hole or trench and shit into it, then mix it with dirt and cover it completly, this way you don't leave anything visible behind and it will quickly break down. Nothing sucks more than toilet paper on the trail.
As long as you move you will be fine, but you will be cold when you just sit around, bring a fleece jacket or something else that insulates.
Don't wash in a stream with soap. The soap is destroys a lot of life if it gets directly into the water, even small amounts, even the biodegradeable stuff. Instead wash a few meters away and dump soapy water on the ground, a spot thats always a bit moist is perfect. It will break down in a few days and not be a problem.
