Canoes and kayaks are both great, I love both whitewater and flatwater, I also race. As far using a kayak paddle in a canoe goes I really don't care for it, lots of people swear by it but they also rarely finish races and never (or rarely) place. Single blade is my preference for a canoe, in whitewater they are actually faster for switching sides. There are canoes and kayaks that will do anything you want, whitewater, flatwater, etc. With the exception of steep creeks I prefer a canoe though.
