Depends a lot on your set-up - if you have a good enough /out/stove and crockery, you can braise all sorts of shit over several hours. It's very relaxing after a long day, especially if you have a view.
You also want contingencies if the weather is poor - make sure you can set up a tarp that will give good overhead protection, while letting any smoke escape.
