All this stuff about stainless being more expensive and harder to sharpen and not holding an edge as long held some truth maybe 40-50 years ago when stainless steels were in their infancy, but not now. It's basically boomer fuddlore at this point that passes for conventional wisdom.
You can have stainless that's tough and carbon steel that's brittle. You can have stainless that's easy to sharpen and carbon that's hard to sharpen. There's a million different modern alloys out there for both stainless and carbon with so many different properties that you can't put a blanket statement on it outside of rust resistance. Ultimately steel itself is low on the totem pole on what makes a knife good anyways.Get one that suits your needs.
