The biggest mistake beginners make is to try removing too much wood with each carve. Instead, you carve small shallow chips. The harder the wood the smaller the chips.

This is the wrong technique. The strokes are too long and too much wood is being removed at once. There's too much room for mistakes both with the work piece and safety.
