Use [M]anual mode, obviously. Start with a moderate ISO, open up the aperture all the way, 30sec shutter, hit the button, and adjust from there if needed. On my Nikon, to go more than 30sec requires an external shutter release. I use the cheap infrared one, and the stopwatch on my phone.
I know more about Nikon bodies than Canon bodies... but Canon makes some real nice stuff. The entry-level Nikons leave out a lot of important stuff ... mainly a body-side focus motor. Stepping up to the next-level camera with that internal focus motor means you can use the older D-series lenses and most aftermarket glass. Without that motor you're stuck using newer lenses with their own AF motor.
There's a handful of other features they leave out of the entry-level stuff too... but the AF motor is the biggie.
