The actual pack depends heavily on time of year and activity. I try to bring the smallest pack that I can get away with as a general rule. The biggest downfall I think of most new people is definitely bringing too much shit. Carrying too much is just dumb and can get you into trouble or just fatigued. Current pack that I am using this summer in PA for specifically day hiking is just 6 liters. Camelbak Ambush AKA the FILBE hydro carrier. Take your pick of either. Pic related.
So first off, for a minimalist pack, I do not want to even have an actual pack. I try to use a stiff belt and suspenders to carry as much as I can on my person. Pouches and the like. For the summer, I am rocking a medium sized hydro carrier that is a 6 liter pack. I can fit everything I need but it forces me to put effort into it. For example, I can fish but I pack a pen fishing reel or a hobo reel. I can take a camera but it has to be a cell phone or a small guy that is about the size of a deck of cards. I also only pack super calorie dense foods and multi use objects. Everything has to nest...no dead space.
