Hit Shasta, the north coast, Big Sur, double back up to the Sequoias, hit Bishop/the Eastern Sierras, Death Valley, Joshua Tree, and that's early beach season so save a few days for the SoCal beaches.
I may be biased though, I love the ocean. Try doing some diving/kayaking in the kelp forests if you're up to it.
