Arizona and Southern Utah are about to get hot in a month or two. Go high alt or further north.
Get 200lbs of rice / beans and a bunch of multi vitamins. Then buy as you go, very unlikely you won't be able to find food for sale.

Taking an extended vacation 2-6 months is something i do pretty much every year and it isn't hard. IF you have an exit strategy.
