The population density is too high, even in the countryside. Take a look at Germany using the Google Earth satellites. There aren't many forests left. Even worse, a lot of them in North East Germany, Brandenburg especially, are boring monocultures that feel dead and sterile.
Employees have a month of paid leave, so a lot will go to other countries to enjoy nature. The best parts nature wise would be the far north, if you like the sea and the far south, close to the Alps. Some parts between that can be nice but they are not impressive.
Fishing is possible and depending on the area you will have to realise that you can't fish properly 20-50km around your area because all the lakes and rivers are owned by fishing clubs that don't accept new members. Brandenburg is good but Bavaria and Baden-Württemberg can be a nightmare in that hindsight.
Hunting is possible but expect to spend 2000-3000€ for a license and the courses that take 6-12 months.
If you want to do more than take a walk for one or two hours then most other countries in Europe are better for /out/ists. Germany offers a fine mix of almost everything and the cultural landscapes can be very beautiful. Raw nature isn't a strength of Germany.
As a result of that and other factors I have decided to emigrate to another country within the next three years.
