You will definitely want to get the KJ-45 centering knife jig, that will be 95% of what you use for knives. If you are going to be doing larger filet knives for the fishing guys you may want the KJ-140 long knife jig. And eventually you can consider getting the small knife jig which is good for really small parrying knives and pocket knives (like slip joints).
Beyond knives, I use the axe jig from time to time, and that’s a cheap one. And the basic chisel jig for chisels and small hand plane blades, chisels are incredibly satisfying to sharpen on the Tormek. And I should say, my favorite Tormek accessory is legit the over priced rubber mat… it’s overpriced and not strictly necessary, but damn it’s well made, and really helps keep the work space tidy and spill free.
Now this is true for learning any new system, but the Tormek and power sharpeners in general, for the love of god, practice on many junk knives before you try anything with value. A T8 can eat a bevel so fast if you mess up. Also I can give you some tips on angle finding if you want
