You can run them without the blades, or with blades and beads (look for Lindy Rigs) and most of the time we would have 2-3 hooks on each rig with multiple minnows. I think we used fathead minnows IIRC, not the smallest minnows but not quite as big as smaller shiners.
Walleye loved those rigs with the blades and minnows. You can run nightcrawlers instead of minnows too and it's popular to get a needle/syringe and pump the worms up with air a little bit so they float and stay off the bottom.
I can never find a pic of the exact rigs we ran and it's annoying. I think the Lindy Rigs normally have two hooks, so it was basically a 3-way rig but instead of just plain line to the hook off of the 3-way swivel, you tie a Lindy Rig on.
