I live in mainland Greece and the cops only give a fuck if you light a fire in the summer (not a clever thing to do here) or camp near a beach that has people making money off it (rooms to let, beach bars etc.). I camp in the mountains and I only see people during the July and August and only on a handful of well known trails. Go literally 50m off-trail and no one will ever see you.
It's technically illegal to camp because of a law from the 1890s, but hammock camping doesn't count as camping and as I said nobody snitches here if you're not a dipshit leaving trash and lighting fires.
