I usually do oatmeal + peanutbutter and coffee for breakfast
Peanutbutter+avodaco wrap (sounds weird but it's nice, can add some honey if you like) or cured meat + hard cheese (usually some capicolo + crotonese) in a wrap for lunch.
Dinners vary, any combination of boiled broccoli, meat (carried in), rice, fish (if I caught), potatoes, veggie stirfry, bannock, or pasta aglio e olio.
Luxury dinners are usually for the first night, because stuff goes bad/ is heavy; If going distance it's usually all dehydrated stuff after that first night.
If you're staying active and going some distance, some GORP is good to have or bars of some kind to eat quick while moving. I do Cashews, macadamias, raisins/dried cranberries, brazil nuts, walnuts, pecans, pistachios. You can honestly live on this alone for a while if shit goes south. I usually bring more than I think I'll need and just keep it in the brain of my pack for easy access.
