If you're okay by then the SAS says your food is most likely fine because any effects would have been felt by then. I would invest in smaller jars since it doesn't seem like you have a whole field of crops. Get a good book on fermenting/pickling is what I recommend if you plan on incorporating this into your lifestyle.
