Bring spare paddles! Especially when going through whitewater you may lose one, and so having a backup at the ready will get you through the rapids until you're able to retrieve the next.
If you're interested, look up Ray Mears on the Missinaibi on YouTube. He goes on an extended canoe trip and you may pick up some tips there. But, much of his style might not suit your needs.
What kind of canoe is it? Royalex/plastic? I'm assuming so, so you shouldn't need anything for repair of the canoe should you bump it. Royalex is pretty tough.
dry bags! You'll be sure to want dry clothes to put in if you get wet.
tarps! tarps to keep you and your stuff dry, or to use in case of your tent failing.
bear spray! I would recommend this stuff. Sure, it's not foolproof, but as a last line of defence its one of the better things you can have.
Good knives, a good hatchet and/or a good saw. Possibly a stone or file to sharpen them if you are so inclined.
What are you doing for water? If you don't feel like boiling, you could pick up some purifying drops from MEC or whoever.
It's starting to get cold this time of year (potentially), and so pack warm clothes... a toque is always welcome even in the middle of summer.
cordage! bring rope, always comes in handy.
tape - also always comes in handy. To save space take duct tape and wrap it around your water bottle. In this way you'll always have some at the ready as needed.
.. I could go on and on, but would like to hear what sort of terrain you'll be in. Also, lucky to have a dad taking you out. I hope to do the same if I get some kids of my own.
