Look at the image in my post. Keys unlock locks by raising a series of pins to what we call a sheer line. In the image you'll notice that the green pins are aligned to the perfect level to rotate and open the locks. This is, as you know, the basis for locks.
The differences occur when locks are produced. Because machined locks do not usually have a high degree of tolerance within manufacturing they are vulnerable to lock picking. Security locks have a higher tolerance when manufactured and are made to be more resistant to picking. Security pins also make things more complex leading to situations where "false binding" occurs. This doesn't make the lock and more difficult to get past. It just takes time to master your craft and soon you'll be bypassing locks in under a minute, I speak from experience. The best thing to do is to practice as much as possible. Look on ebay and get a lot of locks without keys. Practice picking until you get it down perfect.
