I haven't had to tow a sailboat yet this summer and there are a lot in my area. Towed two disabled power boats in the last two weeks. Another crew in the area towed one sailboat (grounding) and one power boat in the same time span. In my experience the pattern you're suggesting doesn't bear out.
Furl the sails and a sailboat is now a power vessel with a deep draft. There's nothing about them that is riskier or less reliable.
