You can gut it and drag the whole carcass back. If alone I usually tie a rope to the neck and the other end to a thick stick if it isn’t a far haul. This is what I typically do when stand hunting whitetails close to my house or a road and I smack a doe. Then you can hang it at home and take your time processing the animal. However if you are out in the middle of nowhere or are faced with a massive 200+ lbs animal alone this just isn’t gonna happen. I had to drag my last big buck out of the weeds with my truck because my brother and I together couldn’t get the fucker out. When faced with huge critters your best option is to quarter it out. I usually go by the gutless method because I have no use for the hide and rib meat is shit on just about everything. Some people like the livers but I’m not a fan and while I like the heart meat I’ve never been in a situation where I had enough daylight, pack space, or energy to dig through a chest cavity for a softball sized chunk of meat that may or may not have been shredded by a 7mm. Go down the back like a zipper. Take the backstraps. Remove each limb at the shoulder and hip. Take the head last. Whether it’s a trophy or not the tongue and cheek meat is good and knowing how to do a Colombian Necktie is a useful life skill. For pack out a good rucksack and plastic trash bags are my preferred method. Have a few coolers ready back at the vehicle.
