One of the reasons hogweed and wild parsnip are so nasty is that skin contact with some of their components can cause photosensitive dermatitis which is apparently very unpleasant. Again that's not all types in the family and sensitivities vary from person to person so you do you, but for me I play it safe around the potentially bad carrots.
