Well if I can't convince you to use a canoe, then I agree with the fishing kayak guy. Something 12 ft or more. If you are not fishing from your boat and you want to paddle in colder water I suggest a sit-in kayak though. Sit-ons are for fishermen and casuals. Look on craigslist or facebook marketplace for a good used boat rather than going to dicks and buying whatever shit they have on the racks there. Pic related is an old wilderness systems pungo which has been great for simple kayak camping for me. If you are going in the ocean you will want something more substantial and will need to train with it.

Go on craigslist or facebook marketplace and look for kayaks in your area. Get a recreational kayak that you like. You'll still have to do some research to figure out if what you are buying is quality. Pic related is the same model as my boat, she's sturdy and I payed around 300 for it.
