>>147667Well The ESEE 3 is a bit thinner stock than the Izula, also the Izula I and IIs only difference is the handle length. The only real concern I might have are the stock handles which can absorb debris, oils, and other nasties. Most of this has to do with food prep.
For carving they will work I am a bit prejudiced towards the Mora in this regard however. In my experience the ESEEs are not comfortable when using scissor or chest lever grip cuts due to the handle shape on the pad of my hand. For simple wood tasks they work but the Moras due to my familiarity work better. Not trying to dissuade you just simply my observations.
