If you have two omni mics, you should really look into binaural recordings. Just experimented a lot with it, and got to use a 20k$ binaural dummy... But also build a jecklin disc using thin plywood with a cheap foam pad cut up on each side.
Got extremely good result with the disc! Would say that they stood up to the dedicated dummy-head within 95%
