Maybe because it's easy to identify. But it has a mild taste, you can't really mix it with a lot of ingredients.
Less is more for this one. It can even be eaten raw. Altough it is not my favourite mushroom. I really really like porcini and it also can be dried, so I usually few have jars of dried porcini for whole year.
I also like the smell of fresh chanterelles. Reminds me of apricots.
