i found that a very salty batch of jerky that I made, went kind of soft after a few days, kept it in sealed tupperware but might not have been totally air tight. i dried it a second time for just an hour or so, and it seems crisp and good again, will it be ok?
part of me thinks the extra salt itself is acting as a dessicant and sucking moisture out of the air.
