Go off grid, build, learn, grow, and if you outgrow the property, expansion is always possible but by then you'll have a ton more knowledge and skill in the off-grid process.
Pic related is the shed I built on my parcel last year. I've done more on it since these pics were taken, but the exterior is still far from finished because I underestimated how long it takes without a generator (used battery drill, half battery tools / half handsaw for cutting, and hammer and nails for the rest).
