I call this "squirrels on a half shell"
first I parboil, 15mins with seasonings. I like Johnny's seasoning salt, black pepper, and garlic.
then cut the squirrels vertically, down the spine. So that you have 1 front leg, and 1 rear leg on each half (see pic)
then you can grill, or broil. when they look dry, dip them in the seasoned water left over from the parboil.
Usually I'll cook, and dip 3 times, then serve and enjoy!
