Literally everything is regulated by law.
While there are spots that are not as densely populated as in Germany, it is still owned by a farmer/forester/government, who will prbly not like it, if you are on his ground without a warning. Also, there are huntsman in every wood, so the chances of you going undercover for a couple of days is pretty low.
There even is a law, that you are not allowed to sleep in your car and you can bet that people will call the police.
But on another note, like everywhere, it depends on the guy you meet.
You can meet a super nice forester who doesn't mind at all, but you can also meet a farmer who will call the police on you if he doesn't agree.
