Coleslaw also dehydrates really well. I really love putting pulled pork with corn, jalapeno peppers, macaroni and cheese (pic related).
Babybel cheese is also amazing and good for up to 4 days as long as it is not really hot out. That, combined with smoked oysters, beef jerky, crackers, hummus, dried fruit etc. is my usual lunch.
