I've been using a Canon SX130 for /out/ings when I don't want to lug my DSLR. Not too expensive, has manual mode, takes good pictures (I've printed some 16x20 and exhibited them), good zoom, uses AA batteries, and shoots RAW with the CHDK firmware hack. Not super duper compact, but I don't care. I just got a SX160 today, I wanted to get one before they disappear because it's the last in the series that takes AAs (and the 130 won't last forever).
Also use:
Nikon D90 (great camera but it's bulky)
Lumix GF2 mirrorless (nice and light, but battery life sucks for more than just day trips)
Various old film cameras, but not usually on outings
