I've been reading a book "Wild camping - Exploring and sleeping in the wilds of the UK and Ireland" by Stephen Neale. Apparently you can basically go anywhere but if you don't move when they ask you'll get arrested. I believe that Dartmoor has it enshrined as a right that you can camp if you can be bothered going there as well. Also apparently it's okay to camp on public footpaths. I wouldn't do multiple nights in the same spot though.
Avoid the Norfolk broads like the plague though, it's full of Chavs/Tourists and the people who own the land are super zealous about campers so you can't go Canoeing/Kayaking and camp on a mooring. Though there are campsites.
I'm not sure what it's like in Thetford forest, I used to go cycling there and it was pretty busy, I think the logging companies wouldn't let you camp though.
Also camping on foreshore is a right I believe, might want to read more into that. So if you're coastal you have that going for you.
