The string bears most of the load, the sticks just make sure they don't sway in the wind too much, preventing ropeburn on the stems. I prefer sisal or other natural fibers because you can simply compost them when you're done. I use new rope every year, to prevent transmitting diseases through them.
I let them get about 1.5meters high, about 5feet, before pinching off the growing tip; I get 4 or 5 racemes per plant. The growing season over here is too short to let them get much bigger.
