Just having these things is not enough. Make sure to have the knowledge of using them, or even better, start rotating all of these into your regular routine.
The national center for home food preservation has a downloadable pdf of all of their canning recipes. And I recommend stocking up on dehydrator recipes as well. Look for free kindle books and recipes.
You're not going to rely on your appliances if the time comes, and you're too intimidated because you never had need for them when times are good. Make it a hobby, not a collection.
