Cannon Beach has that giant meme rock you always see posted on earthporn blogs or postcards, make sure to check out Hug Point too during both low and high tide
You can go clamming or get mussels on the shore, you can try fishing for salmon in the Columbia river too
Not sure what there is to do much in WA but I think you can get oysters grown on the coast and there's better clamming up there
