I am growing Jerusalem artichokes in a container this year. I'll wait until either the leaves die down or the first frost is coming to harvest, but I really like the idea of not needing to buy seedlings or seeds, so I save seeds of most of my plants. How do I overwinter/keep jerusalem artichoke though?
The tubers don't keep very well, I grew picrel from some jerusalem artichokes I got at a grocery store and the two others I wanted to plant seemed to shrivel up within days.
Do I just keep a tuber or two in the soil in the container? Do I need to move the container indoors or can it stay on my balcony? Or do I keep the tuber itself somehow?
I'm in germany, so winter does get cold.
