>>310340Here's how I do it. If it's bad, don't worry about how many strokes you use to a side as long as it's close. That'll keep the edge centered well enough. And that sharpener is fine, I keep one in my car.
Learn to feel the burr, and don't stop on one side until you feel it if the edge is pretty far gone. Make sure the marks you're making go all the way to the edge of the blade. Then make about the same number of strokes on the opposite side. Then do fewer and fewer per side until you get to one stroke a side for a bit so you minimize the burr you leave at the end.
