Learning which fish is what comes with time. You catch a dozen Snapper and you'll know what a Snapper looks like from them on. I've never met anyone who can remember the bag limits for everything off the top of their head. It would be pretty pointless to sit there memorising bag limits anyway, as they're subject to change. I just have something like pic related (biggest I could find in GIS as they don't want to give it away for free). They sell them for like $10 in my country and it lists all the fish you're likely to catch in that state, as well as legal sizes and bag limits. Hell, it even tells you things like what's good to eat and that. They're laminated, so I just throw it in the bottom of my tackle box.
