I'd suggest driving along the coast in Oregon. Cape Perpetua is a pretty incredible place. Though, alternatively, you could drive through the High Desert (maybe rt 97? The Dalles-California hwy). There's much more to see and do driving along that route north than there is on the straight line that is I-5 in Oregon.
