Moka pots are durable, easy to use (you don't need a separate pot to heat the water) and they make good coffee, but they're heavy.
Portable pour-overs will give you the cleanest cup a joe (no grounds or residue in the cup), but you need to pack out or burn the filters.
Another minimalist option is to buy those packages of pre-ground coffee that come in mesh bags, so you can make coffee like you'd make tea. Obvious downside that you have to deal with the coffee bag.
