You can't grow citrus or tropical plants but otherwise you're warm enough to grow pretty much anything. If I were you I would start by doing a search for "hardiness zone 8 planting schedule" and see what looks good to you. Then go to a local gardening store and see what seeds and plants they're selling, that will tell you what other gardeners around you grow.
