The issue is that when you have a massive nonlinear system like earth's atmosphere, adding more total energy doesn't mean all the same steady-state patterns persist at two degrees hotter. Instead, all of those patterns change - you have wider extremes in both directions, more sudden swings between those extremes, and a complete collapse of the consistent climate patterns that all life on earth has steadily adapted to. It's a chaotic thermodynamics problem. This is why both storms and seasons are more extreme now.
The goalposts are moved because conman politicians need to convince dumb liberals they can vote their way into saving the world. The truth is this heating is locked in, society isn't going to suddenly get its shit together, and we've already kicked off the most rapid mass extinction event in earth's history.
