kananaskis (nice because it's so damn close to calgary. I've seen more animals here than anywhere in canada. You have a good chance at seeing grizzly bears). Excellent fishing at the lakes for cutthroat, rainbow and bull trout.
Maligne Lake near jasper is a great one. you can drive out, rent canoes or kayaks and go across the lake to the camp site on the other side. There are also trout in the lake. It's pretty cool to see the rainbows all stacked up at the river mouth during spawning. There are also brook trout there. The picture is spirit island which is sort of a well known canadian icon spot.
I've heard algonquin park in ontario is nice too. BC is also great but can get kind of wet on the west slope side.
