Those are thin-skinned which will split and peel back. I have black walnut trees on my property. They don't split their really thick skin and are a major pain to clean. I suspect you should keep an eye on the fruit until you see a few of them just starting to split. Then harvest what you think you need for planting regardless if they are fully open or not.
