There are two, one month hunting seasons; one during the rut in March and another in the depths of winter in June. I'd like to see some national parks opened up for deer hunting and extend the season to all year. They are an introduced species after all.
Hunting typically involves hiking through bushland to clearings and waterholes at dawn or dusk. Farmers can also cull them using spotlights. Rifles must be larger than .243, and I use a Winchester model 70 in 3006 running handloaded 155gr hornady A-MAX projectiles. Pic from a doe in central highlands last winter.
